Coffee Punch
1 pint each vanilla and chocolate ice cream, frozen hard
1 tsp. creme de cacao syrup, 5 cups hot coffee

Pour coffee over ice cream and beat lightly until partially melted. Add creme de cacao. Pour into punch

Pumpkin Ice Cream
1 16 oz can pumpkin., 3/4 cup packed brown sugar
1/4 tsp. ground cinnamon,1/8 tsp. ground nutmeg
1/4 tsp. ground ginger, 1 cup skim milk
2 cups non-fat whipped topping

Mix ingredients. Freeze according to ice cream maker's directions. Makes: 2 qts.

Make Rice Krispie® Treats. The directions are on the cereal box. Form the into balls, about 1 or 2
inches across. Add a pastel M&M® or other small round candy for the iris and dot the candy with
frosting or gel for the pupil. A big hit with the younger crowd!

Jack O Lantern Cookies

Ingredients:

3/4 cup butter (softened)
1/2 cup brown sugar
1/2 cup pumpkin-pie filling
1 egg yolk
1 teaspoon vanilla
2 1/4 cups flour
1/4 teaspoon ground ginger
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
Pinch of salt

 

Preheat the oven to 375 degrees Fahrenheit.
Cream together the butter and brown sugar.
When the mixture is blended, add the
pumpkin-pie filling, the egg yolk and the
vanilla. Blend thoroughly and set aside. In a
separate bowl, combine the flour, cinnamon,
ginger, nutmeg and salt.

Gradually add the dry ingredients to the wet
ingredients and stir until mixed. Place the
mixture in a sealed plastic container and
refrigerate for 30 minutes. Then roll out the
dough to a thickness of about 1/8 inches. Cut
into shapes using cookie cutters or make a
giant jack-o'-lantern-shaped cookie by using
your hands. Make a jack-o'-lantern face by
pushing M&M's into the uncooked dough
and then bake for 10 to 15 minutes.
